  1. For the pâté in an autoclave, it is necessary to prepare the offal: scrape the head without brains and legs thoroughly, peel, and then cut into pieces. Be sure to check the tightness of the connections. Place the autoclave on the stove and heat it to 110 degrees. To prepare pate for the winter, the jars must be kept at this temperature for an hour. Make sure that the temperature is not more than 120 degrees. After the time has elapsed, turn off the heat, and leave the autoclave for half an hour to cool down. After that, release the air, open the lid, drain the water and remove the bathki.
